AFURI is born of the belief that a “good bowl of ramen” does more than just satisfy your appetite—it has the power to warm the soul and bring us all closer together. A Tokyo original since 2003, AFURI aspires to make the best, authentically crafted Japanese cuisine you’ve ever tasted, while building community and sharing our culture with the world. In the same way our signature yuzu shio ramen brightens the spirit with its refreshing citrus flavor, we aim to bring joy and happiness to everyone we meet, wherever you find us. In 2016, AFURI proudly opened its first restaurant outside of Japan in Portland, Oregon. There are many reasons why we chose to introduce our unique style of ramen to the Rose City, but the biggest is that Portland offers us something few cities can—soft water from a pure source within close proximity. Thanks to Mt. Hood, Portland’s ecosystem produces water nearly identical to that which flows from Mt. Afuri, Japan’s sacred mountain of good harvest. The geographical features we share create water that’s perfect for ramen making. Water quality, combined with easy access to bounty from local Pacific Northwest farms and producers, allows us to make the freshest, highest quality ramen and Japanese cuisine possible. AFURI’s signature ramen is light and refreshing. We layer aromatic flavors and textures to create natural umami that pairs perfectly with our handcrafted noodles in steaming broth. The addition of yuzu, a citrus fruit native to Asia, gives a touch of brightness and enhances the flavors, all while balancing depth and richness.
