Chef Toni baked her first scratch-made biscotti cookie in the fall of 2004 after her daughter, Lisa, had gone off to college. After biting into her crunchy creation, she decided she was not a fan. She attempted 3 more batches but still wasn’t pleased with the traditionally crunchy cookie. That's when she set on a mission to reinvent the Italian cookie. She made tweaks to her recipe, researching what made it a biscotti, and what changes were needed to make it a soft-baked texture. After many iterations, she shipped a loaf to her daughter, Lisa, to enjoy while she studied for college exams. They were addicting! How did she do it? It looked exactly like a traditional biscotti, but when you bit into it, you instantly were greeted with this soft, satisfying texture. Lisa and Chef Toni have been baking together since Lisa was old enough to sit on the counter and assist. The two teamed up on a mission to share their creation with others. In 2017, the opportunity finally presented itself for the two to launch their own coffee shop specializing in their soft-baked confections offering over 12 rotating flavors. After 7 years of operating their small bakery café, Chef Toni and Lisa decided to transition their business away from the coffee shop store model to focus solely on the biscotti by launching an at-home baking mix to be sold in retail stores across America. Today, they have created 5 baking mix flavors and are awaiting final funding in order to launch their first sales in Costco.
