That's when I could start calling Birmingham home." Later, economic shifts temporarily shifted his focus to residential homebuilding. However, after years of patience and with a devoted partner, Thompson finally realized his dream and opened Cajun Steamer's original Hoover location. The spot holds sentimental value, situated near the land of his initial stand. A brief departure from the culinary scene led Thompson back to Louisiana. With a renewed spirit, he returned, seizing the opportunity to establish The Cajun Roux Bar & Grill in Hoover, Alabama. The restaurant, unveiled in 2018 at Stadium Trace, symbolizes his dedication to sharing his heritage through cuisine. Thompson mused, "It's been an exciting ride for us. I like to think the towns that have welcomed us so far have fallen in love with our food, our atmosphere, and our genuine Cajun hospitality." His words capture the heart of his journey—an interweaving of flavors, community, and culinary passion.
