We use the latest technology and equipment in our manufacturing process. We regularly attend local and international trade shows to share experiences with fellow cheese makers and equipment manufacturers both in the US and in Europe. This is why our cheeses taste so great, are so conveniently packaged, and store so well without any preservatives other than salt. Our manufacturing process is designed to be eco-friendly. We source milk from local dairies to reduce the carbon footprint, use organic cleaners and sanitizers whenever we can, choose energy efficient equipment, and treat our manufacturing waste responsibly through recycling, filtering and composting. The only preservative used in our cheeses is salt. It has been created by nature and used by humans as a natural food preservative for centuries. Our cheese makers are skilled in maximizing the preservation properties of salt to protect the quality of our cheese while maintaining its taste harmony. Our production facility is located in the dairy farm rich region of Northern California. We use fresh local milk all year round. We are accredited by the California Milk Advisory Board to proudly carry the Real California Milk Seal on our products. Some types of cheese cannot be made by machinery alone. Centuries old traditions have set the bar for quality which can only be achieved by hand making. Some of our cheeses are hand stretched to create a uniquely fine yet dense springy texture. Therefore, our hygiene protocols generally exceed the common manufacturing standards. Water used in our manufacturing process is purified by a modern filtration system to ensure that cheese properties cannot be affected. We are committed to delivering the same great tasting cheese to you every time. We pay a particular attention to following the old traditions of cheese making which have been tested by time. It is important to us that our cheeses maintain the highest quality and the best taste possible.
