Whether celebrating our connections to the land, animals, farmers, and each other or the joy of fine charcuterie, we want to help make gathering happen. Tucked away in the Driftless Region of Wisconsin among the coulees, ridges, and world-class trout streams is a community joined in raising and growing sustainable, animals and produce. This region is home to an abundance and an ethic of doing things the right way. Sometimes the right way is the slow way. Our animals are raised humanely, they’re not fed antibiotics and they’re not crowded into undersized feed lots or rushed to a target weight compromising their health and enjoyment of life. They’re given good food, the run of the land, and a full life. The process of growing, shaping, and tending to the meat as it dry cures concentrates and enhances the natural flavors and textures creating a superlative experience.
