Nestled in historic West Rye, NH our small family operated farm, Élevage de Volailles, is where the critically endangered heritage Chocolate Turkey has found a sanctuary in its pursuit of survival as it marches toward reclamation. Élevage de Volailles sprung from our passion to preserve the heritage Chocolate Turkey, designated as Critical on The Livestock Conservancy’s Conservation Priority List. Once a mainstay of pre-American Civil War commercial turkey and family farms, the Chocolate Turkey was almost lost to war and the industrial revolution. Our goal is to rejuvenate this special breed’s place as the pièce de résistance of the Thanksgiving table and showpiece of the family farm. The philosophy of right thought, right action, right livelihood is at the core of our beliefs and an anchor in everything that is accomplished at Élevage de Volailles. While priorities are fluid and always adjusted, values are unwavering; it is these values, of doing the next right thing that we hope to bring forth and share by offering unparalleled quality at an affordable price with all our products we offer.
