About Enchilady

Michelle Barraza is originally from Ciudad Juárez and has been living in Manchester, England since 2021. She founded Enchilady Mexican Food with her husband Andy in September 2023, at a friend's party who asked her to cook enchiladas for their guests. Since then, they have been sharing the flavor of northern Mexico in the United Kingdom, with their Mexican food pop-up in different pubs and markets. From September 2023 to November 2024, Enchilady has had 25 events open to the general public. Why we named our business Enchilady? Because everyone knows Mexican tacos around the world, but what about enchiladas? First, Michelle's family lives in Lagunitas, Chihuahua. Lagunitas is a ranch where most people are dedicated to growing Chile colorado, a type of dried chili characteristic of northern Mexico. Michelle's deepest culinary memory goes back to some good red enchiladas, made with Mennonite cheese and chile from her dad's ranch. Currently, the sauce for Enchilady's red enchiladas includes red chiles from Lagunitas. And on the other hand, well-made mole is simply one of the most incredible gastronomic gems that Mexico has for the world. For Enchilady, it is very important to generate ties and support networks, and now her improved recipe includes Alexa's mole, from Chili Maven, because it is delicious and of excellent quality.
