About Food Saved Me Institute
Food Saved Me Institute (FSMI) inspires others to improve their overall health with proper nutrition education, teaches about disease prevention and equips others to make an impact in communities around them. FSMI is an approved 501(c)(3) nonprofit organization established in November 2022 founded by a Master Nutritionist who has over 17 years experience in teaching others how to live longer, healthier lives through ongoing nutrition education. Food Saved Me Institute currently has over 100 certified nutrition instructors in 12 countries with a total combination of 500 classes and 5,000 students taught worldwide in just one year. Our founder, Katherine Lawrence, is a globally recognized nutritionist with more than 17 years of experience teaching nutrition for disease prevention, along with being a mother to five children and a decorated war veteran through Operation Iraqi Freedom. Katherine has personally taught FSMI nutrition classes in person to over 20,000 students in the North Texas area. In addition to certifications from Stanford Medicine in Nutrition Science and Cornell University in Plant-Based Nutrition, she has worked personally for Dr. T. Colin Campbell and Dr. Neal Barnard, featuring her story in several of Dr. Barnard’s books. While working as an aerospace engineer in 2006, Katherine was diagnosed with stage 4 endometriosis, ovarian and uterine cysts. She was told there was no cure for her condition, that she was completely infertile, and that a total hysterectomy was the only solution. Through complete dietary transformation, she was able to reverse her condition and go on to have three healthy boys. After this remarkable recovery, Katherine uprooted her life and became dedicated to bringing the power of nutrition to the masses, where the idea of Food Saved Me Institute was established.
