About Holsteiner Degorgierer
At Holsteiner Degorgierer, we craft sparkling cider with character, made from hand-picked, regional apples and refined using the méthode traditionnelle, the same artisanal process used in Champagne. We are proud to be Northern Germany’s first dedicated sparkling wine production facility. Rooted in the Holstein region in Cismar, we combine agricultural tradition with modern craftsmanship to create a unique product that reflects the terroir of our landscape. Our ciders are organic, bottle-fermented, and produced in limited quantities. We currently sell exclusively in our region to maintain quality and build strong local relationships, not scale at any cost. Funded in part by the European Union, we’ve built a dedicated production facility to sustainably grow the business, one bottle at a time. No investors. No shortcuts. Just apples, time, and passion.
