Access to adequate, safe, and wholesome food is increasingly critical for sustaining the world’s growing population. Yet, efforts to advance food safety and nutrition security are often siloed, with minimal consideration of the impacts in these complementary areas. For example, redistributing food waste to food-insecure individuals can inadvertently increase the risk of foodborne illness—through temperature abuse and mishandling—in a vulnerable population that has limited access to resources such as healthcare and paid sick leave to deal with even mild gastrointestinal illnesses. Food safety and nutrition security are intrinsically linked. Foodborne illness can impede the body's ability to absorb nutrients, while malnutrition can impair the body's response to foodborne illness. Solutions to food system issues need to account for this synergy. The Institute for Food Safety and Nutrition Security aims to break down these silos and advance equitable food systems that promote public health and prevent illness, using a One Health approach.
