About Japanese Knives
At the heart of every knife is the skill of master forgers from Japan and across Asia, whose dedication to the ancient craft of blade-making is unmatched. I’m proud to work directly with these artisans, helping to share their exceptional work with the world and give their craft the international recognition it deserves. Each knife is then hand-assembled by me with care and precision. I craft the handles from either repurposed sawmill scrap or sustainably sourced wood from trusted suppliers — a process that respects both nature and tradition. Every piece is one-of-a-kind. Before a knife leaves my hands, I personally sharpen it on my whetstone until it slices cleanly through paper — a trusted test of sharpness and quality. The final result is more than just a kitchen tool: it’s a functional piece of art that honors centuries of tradition. Thank you for supporting craftsmanship. I hope you’ll enjoy using these knives as much as I enjoy bringing them to life.
