MARE SANTO Treasure of the sea Why is our wine special? The grapes ripen on the green hills of Goriška Brda, where warm Mediterranean air and cold Alpine wind mix. They caress are whip the grapes alternately, which is how it acquires its distinctive flavour. The grapes are harvested manually and only the best is used for wine, which is submerged in the clean, blue Adriatic Sea. A year later, the sparkling wine Mare Santo® is born. THE STORY In Slovenia, the saying goes that the sea heals all the wounds. It draws a different motif on each submerged bottle. The wine in the bottles acquires a special, noble taste and colour in the process. The colour varies from light yellow with green reflections, received by our Brut, to gently pink with violet reflections, which is characteristic of our Rosé. This occurs because at 20 to 30 metres of depth, where the bottles are located, the sea is very alive. At this depth, the sea currents are strong and the bottles in containers are constantly being moved, so along with the sea, the sparkling wine is alive as well. The sea also gives a great deal of minerals to the sparkling wine through the stopper, which give the sparkling wine a unique flavour. The temperature of the sea also contributes to this, since it is practically unchanged throughout the year. The sparkling wine does not fall asleep in such good conditions and it does not get tired either. The constant movement of the sea preserves the freshness in the sparkling wine. The difference between maturing in the sea and in the basement is enormous, as in the classic wine cellar, the wine matures at a normal air pressure, which is constantly changing and the wine can breathe through the stopper. Under the sea, at 30 meters of depth, the air pressure is constant and larger and at the same time, there is no oxygen underwater to enter the sparkling wine, so in such conditions, the sparkling wine can be preserved longer and obtain a special aromatic flavour.
