About Millésime Chocolat

Passionné et formé dans l’univers du chocolat artisanal, Jean-Christophe HUBERT imagine créer sa propre chocolaterie depuis la torréfaction des fèves. Il a été formé au CIRAD à Montpellier - Centre consacré à la recherche agronomique pour le développement en analyse sensorielle du chocolat et en expertise du cacao, et au Fine Cacao and Chocolate Institute de New-York. Le 17 octobre 2017 nous créons l’entreprise Millésime Chocolat SA. Nous confectionnons du chocolat millésimé qui porte la date de la récolte des fèves. A l’instar des cépages ou du terroir, le climat influence de saison en saison les particularités gustatives des fèves. Selon les pays, selon les climats, selon les régions, les récoltes n’ont pas lieu au même moment. A proximité l’équateur, les cacaoyers produisent quasiment toute l’année. Plus on s’en éloigne, plus les saisons des récoltes sont marquées. Dans l’hémisphère nord, il y a deux périodes de récolte : la « grande récolte » d’octobre à février et la « petite récolte » de mars à juin. Dans l’hémisphère sud, c’est exactement l’inverse. Pour nous, le millésime est un repère, car il permet de juger de l’évolution du cacao par rapport aux conditions climatologiques locales de l'année de récolte.
