In the UK our food self-sufficiency has dropped from c. 80% to c. 60%. However, mushroom cultivation is mostly free from the resource scarcity of changing climate conditions. You can grow mushrooms indoors or underground. They don't require agricultural land or the right weather. This is an efficient and super healthy food staple that can easily form a larger part of our future diet. Also, it's key to note, it would be insane if you ate just one vegetable but that's how people see the fungi kingdom. Yet, there are mushrooms for all occasions—great for your brain, your heart, your sleep etc! The interesting (non button variety) mushrooms consumed in the UK are often imported from China because no one is growing them efficiently enough or on a large enough scale to make sense here in the UK. This not only leaves us vulnerable from a self-sufficiency perspective but there are also concerns over the traceability and quality of this sourcing. To solve this I started a mushroom production company to enable pioneering food businesses to sell mushroom tea, coffee, chocolate, pasta—you dream it and we can provide the mushroom component. We grow high quality mushrooms in the UK, from culture to the final product all with renewable energy. By utilising a vertical integration approach we can rethink the whole production. 1.
