To those in the industry it is a well-known fact that the best juniper berries in the world come from Tuscany, just like the iris’ root which is also used to make gin. When Mr. Patrick Hoffer, an English entrepreneur living in Florence, and a gin enthusiast, found this out, he decided to open a gin distillery. Thus, in 2017, a new gin was born: “PETER IN FLORENCE”. The name is a tribute to Mr. Hoffer’s father Peter, also a gin enthusiast. The Podere Castellare di Pelago, owned by Mr. Patrizio Pandolfi, old time friend of Mr. Hoffer’s and partner in this venture, was chosen as the perfect place in which to build this exclusive distillery. The farm and eco-resort Podere Castellare is situated on the Florentine hills, where the best botanies for the aromatization of gin grow. PETER IN FLORENCE is the first specialized micro distillery in Italy. With a laboratory dedicated to give a full 360-degree experience of gin, the herbs are grown, picked by hand and used in the production of small batches of 314 bottles at a time. We handcraft one the the finest innovative and unique spirit in Tuscany using 100% natural botanicals and ingredients. To produce Peter in Florence gin we use a traditional steam infusion distilling method with a small version of the historic Carter head alembic which has produced some of the best gin in the world. We are mostly known for our first born London dry gin "Peter in Florence London Dry". There are fourteen botanicals in its recipe: in addition to juniper. With a central focus on Iris, the icon of the historic city of Florence as our tribute to the beautiful city as “The gin of elegance”, in which not only the root is used (like most traditional methods) but also the petals are used, which is very rare, and emphasizes the floral part of the distillate.
