This approach embodies a true farm-to-table and boat-to-table dining concept. Chef Tripp can often be found several times a week at local Farmers Markets, meeting with vendors and farmers to ensure a continuous supply of the freshest ingredients, a testament to the abundance of the Central Coast of California. Pono Pacific Kitchen's menu features standout dishes such as Grade 1 ahi, flown in fresh from Hawaii daily, locally caught Misoyaki Butterfish from Morro Bay, artisanal sourdough bread from Grover Beach Sourdough next door, and other culinary delights including Braised Short Rib, Duck Confit Spring Rolls, Seasonal Ceviche, and more. The menu combines a sense of familiarity with unique ingredients, blending French culinary techniques with Hawaiian and Pacific-inspired flavors.
