About Roll Cajun
On September 11, 2001, my life took a turn I never could have imagined. I was a college athlete at the University of Louisiana at Lafayette when the tragedy of 9/11 shook the nation. I felt an unshakable call to serve, leaving behind everything familiar to join the United States Air Force. For the next 21 years, my family and I lived all over the world—from Iraq to Japan, from South Korea to Ireland. Yet no matter where I went, something was always missing: the taste of home. Real Cajun boudin—meat-filled, spicy, and bursting with flavor—isn’t just food; it’s a connection to where I’m from, to the love and joy that Louisiana cuisine represents. I couldn’t find it anywhere, and when shipping became too expensive, I decided to make it myself. For years, I worked tirelessly to perfect my recipe, determined to recreate the flavors that defined my childhood. In August 2023, I retired from military service, and with my family’s support, I turned my dream into reality. By August 2024, Roll Cajun Boudin opened full-time. We are new to the business side of things, but let me tell you—when it comes to authentic Cajun cooking, we are the real deal. This journey hasn’t been easy, but it’s been fueled by faith, passion, and the joy of seeing people light up when they take that first bite. What started as a small grocery store selling handcrafted boudin has grown into something bigger than I could have imagined. Now, we bring the soul of Louisiana to shrimp boils, tailgate parties, weddings, and more, all over Alabama. Every dish we make is crafted with love, and every event we cater is a chance to share a piece of our hearts with you.
