About Stillgarden Distillery

Stillgarden Distillery was founded by Viki Baird, Pat O’Brien and Damien Heary. Their dream had always been to do something different in drinks in Ireland and beyond. Boss Lady Viki heads up the highly experienced team with members from hospitably and drinks background. Pat, a builder and active member in the craft scene founder of Dublin Whisky Company and an investor in Rascals brewery, set his plan in motion 3 years ago when he spotted space in Inchicore, adjacent to the Rascals Brewery, for a distillery. Pat built the distillery with his own hands. Damien comes from a Food & Drinks Industry Strategic & Futures background with extensive Global Roles with William Grant, Carlsberg & Diageo. Stillgarden creates Modern Irish Spirits for the Modern Spirit drinker. Our Modern Spirit concept is founded on ‘pro-social distribution’ this means that we utilise science, nature and community to do and create better ….drinks, communities and planet.. Our Modern Spirit concept ignores distilling traditions that dictate where, how and what a distillery should be and what it should produce.. Unconventionally, for Irish distilleries, we offer a range of drinks in the lower alcohol white spirit and aperitif space.
