By using encapsulation manufacturers are able to increase the longevity and control the release of ingredients and flavourings. The bakery industry can use encapsulation to achieve controlled release by heat. For example, SorbicPlus is an encapsulated preservative that provides 6-30 days mould free bakery products. The encapsulate melts only during the baking process releasing the active ingredient continuously and evenly throughout the product. Within the chewing gum manufacturing process, encapsulation can prolong flavour release by encapsulating high intensity sweeteners, acids and flavourings in the product.
