The Iberico Pig hails from Southern Spain and Portugal, where it has flourished for over 12,000 years. With its distinctive black hue, large floppy ears, and slender snouts, these pigs are remarkable and truly a different breed. Thanks to Texas’ similar climate and landscape, our free-range Iberico pigs adapt seamlessly at Trail’s End Ranch, where they roam and forage for acorns, mesquite beans, prickly pear, other native plants, and premium feed. This natural, active lifestyle—spanning up to 18 months, nearly three times longer than commercial pigs—produces rich intramuscular fat and exceptional marbling, earning Iberico pork the nickname “olive oil on legs.” The result is ultra-tender, deeply flavored pork with a luxurious mouthfeel—Wagyu-level quality, right here in Texas.
