Our Story Co-founders Lucy and Stephen come from a long line of butchers and fishmongers. They shared a deep concern for the environmental costs of cheap meat, and started The Cut out of their desire to help others enjoy meat as an occasional (and sustainable) treat, rather than an everyday, mass-produced commodity. They’ve spent the last two years building relationships with sustainable fisheries and farmers, and are excited about bringing their very best cuts to conscious foodies everywhere.
