About Underground Forest

Underground Forest is a small urban farm located underground downtown Tuscaloosa, where we specialize in growing an array of delicious mushrooms and microgreens using regenerative and permaculture farming practices. Our mushrooms and microgreens are grown without the use of pesticides or fertilizers, ensuring that they are safe and healthy for you and the environment. Some of our mushroom varieties include Blue, Golden, Pink, & Italian Oysters, King Trumpet, Shiitake, Maitake, Enoki, Chestnut, Pioppino, Cordyceps, and Lion's Mane. Each of these varieties has its own distinct flavor and texture, making them a versatile ingredient in a range of dishes. From the meaty texture of King Trumpet to the delicate flavor of Enoki, our mushrooms are freshly harvested to add a depth of flavor and nutrition to any dish. We also grow microgreens, which are young vegetable greens that are packed with nutrients and flavor. Our microgreens include a variety of plant species such as pea shoots, sunflower shoots, arugula, broccoli, and radish. Microgreens are known to have high levels of antioxidants, making them a nutritious addition. These greens add a fresh and crisp flavor to salads, sandwiches, and other dishes. Good food should be accessible to all, and we are proud to support the Table of Grace food pantry and Jeremiah's Community Garden. We offer educational programs and workshops on regenerative farming practices, mushroom cultivation, wild mushroom forages, and healthy eating.
