Hey! We are ZYMI, an Athenian organic bakery, established in 1999 by Dimitrios Giolvas and re-imagined by his daughter Melina two decades later. We know dough well here and we like to keep it as pure and wholesome as in the good old days. We like to keep things Greek too. Our ingredients are organic and the finest we can source from certified producers across mainland Greece. Naturally, Mediterranean flavours are the core of every one of our recipes, along with extra virgin olive oil (every Greek's elixir of life).
